Main Purpose of Job

To provide training and supervision to an inmate work force in a specified product line. To train and supervise new MCE employees. Fill in for plant manager as necessary.

POSITION DUTIES

Production and Training - The incumbent is responsible for training and supervising new MCE Meat Plant employees as well as an inmate workforce in the operation of a manufacturing plant and for the production of related products. 

Safety and Security - Incumbent should be fully versed in all related safety procedures.  These duties include but are not limited to:

  • Training and instructing workers in Fire Safety, Equipment Safety and Personal Safety as related to their trade.
  • Responsible for distributing tools to inmate workers and collecting the tools at the end of the shift.
  • Participates in inmate head count at the beginning and end of shift as well as lunch periods.  This is also done during and following all truck deliveries during the work day.
  • Performs periodic inspections of shop to determine safety hazards and verify equipment safety.

MINIMUM QUALIFICATIONS

Education: Graduation from an accredited high school or possession of a high school equivalency.

Experience: Four years of experience working in a meat cutting trade at a hotel, restaurant or institution. The candidate should also have experience in the operation of meat processing equipment (meat saw, meat grinder, meat cubing machines) and in Standard Sanitation and operational procedures.

SELECTIVE QUALIFICATIONS

Applicants must meet this selective qualification to be considered. Applicants must be detailed in describing the nature of their training/instructional work experience.

Candidate must possess HAACP certification.

DESIRED OR PREFERRED QUALIFICATIONS

The following qualification is preferred, not required:

Knowledge of portion control methods.

Experience identifying cuts of meat including primal, subprimal and retail cuts.

Intermediate knowledge of Microsoft Word and Excel

SPECIAL REQUIREMENTS

Candidates must successfully complete a background investigation.
