Main Purpose of Job

The main purpose of this position is to provide overall supervision in the Central Kitchen within a large hospital food-service facility, employee cafe and the outlying dining areas, responsible for food production and distribution, temperature control, waste and pilferage control, and sanitation. This position is in charge of entire department during business hours (i.e., 5:00 to 8:30 a.m., and 5:00 to 7:00 p.m. daily), on holidays and weekends.

Duties assigned to this position include, and are not limited to:

  • supervision of the tray assembly operation and sanitation procedures in the Kitchen, Employee Café and the outlying dining areas
  • coordinating food preparation with the established time schedules and meal services; making adjustments in emergency situations
  • conferring with the Chief Steward/Stewardess concerning issues of supplies and foods to ensure items are available and of good quality
  • instructing cooks on new and improved methods of preparation; instructing and counseling employees to develop skills; coordinating and assisting in the preparation of mid and full year employee performance based evaluations
  • assisting and providing leadership on Quality Improvement Teams responsible for continuous monitoring of key functions in the food service operation


Education: Graduation from an accredited high school or possession of a high school equivalency certificate.

Experience: Three (3) years of experience in food production or service for a large scale food service operation, of which one (1) year must include supervising workers engaged in quantity food production or service.

Notes: 1. Candidates may substitute additional experience in food production or service for a large scale food service operation on a year-for-year basis for up to four years of the required education.

2. Candidates may substitute additional education in the area of food service management, nutritional care, institutional administration or related area on a year-for-year basis for up to two years of the non-supervisory required experience.

3. Candidates may substitute U.S. Armed Forces military service experience as a non-commissioned officer in Food Preparation and Serving classifications or Food Preparation and Serving specialty codes in the Food Service field of work on a year-for-year basis for the required experience.


The desired candidate should have knowledge of and/or experience with therapeutic diets as well as experience utilizing MS Office to create instructions for staff; create signage; compose/respond to emails; and basic computer knowledge.
