This is supervisory work directing and participating in food preparation for inmates or juveniles in City or County jail or detention facilities. Employees are responsible for planning and supervising daily preparation of meals for a number of inmates or juveniles and for ordering and maintaining supplies of food as well as supervising the cleaning and maintenance of kitchen facilities. Work is performed under general supervision. Employees are supervised by the Assistant Warden and Warden in the City Jail, by the Food Service Manager in County Detention, Juvenile Detention Director and the Assistant Detention Director in the Youth Facility. Supervision is exercised over staff or inmates detailed for kitchen work.
High school diploma or GED certificate and one (1) year of experience within the past 10 years in large scale commercial or institutional cooking to include the planning and preparation of menus and meals, the ordering of food and food items, the cleaning and maintenance of kitchen facilities, and the completion and maintenance of records. Applicants must have at least one (1) year of experience in the supervision of staff involved in large scale preparation of meals; or an equivalent combination of education and experience.
NOTE: Qualifying education, training and experience that provide the
requisite knowledge, skills and abilities to perform the job will be considered.
May be required to work overtime, nights, holidays, and weekends and be on call. Must be willing to submit to a mandatory background investigation. Must possess or obtain a current Servsafe Food Protection Manager Certification.
PHYSICAL ABILITIES:
Physical ability to lift food items weighing up to 50 lbs. unassisted as needed to unload supplies and place into inventory or use for food preparation.
Physical ability to walk, stand, stoop, bend, twist, turn and reach as needed to perform or supervise food preparation tasks.
