Under general supervision, performs food service work of average difficulty using basic cooking, baking and related skills and knowledge; and does related or other work as required in accordance with Rule 3, Section 3 of the Civil Service Rules.
CLASS CHARACTERISTICS
This is the second level in the Food Service Worker series. Incumbents assist cooks, bakers and others in preparing a wide variety of foods; independently prepare simple foods; act as a lead worker over employees performing routine food service work; and ensure that patient trays are prepared correctly.
TYPICAL DUTIES
Assists cooks in preparing a wide variety of food items; steam cooks and grills a variety of foods.
Assists cooks and bakers in preparing icings, fillings and in baking a variety of pastry and dessert items; routinely prepares and bakes foods such as doughnuts, puddings and rolls.
Learns to maintain records of patient menus and diet changes; prepares diet cards; identifies special patient needs; totals numbers and types of meals required; labels special items.
Prepares, portions and labels special diet items including salt-free, sugar-free, low-fat and pureed items; oversees preparation of patient trays; verifies amounts and types of food, beverage and condiment items.
Participates in routine work assignments including washing and storage of dishes, equipment, pots and pans; delivery of food and supplies; salad preparation; portioning and serving food; and setting up eating areas.
Operates and balances cafeteria and canteen registers; sets up, operates and cleans equipment and areas used to prepare and serve food; may perform general cleaning duties.
May act as a cook, baker, meat cutter, or on the dietary desk on a relief basis or for training purposes.
May deliver food to various County facilities.
MINIMUM QUALIFICATIONS
Experience: One year of experience in high-volume food service work including a minimum of six months at a level equivalent to Food Service Worker I in San Joaquin County service.
License: Possession of valid California driver's license.
KNOWLEDGE
Basic methods and techniques of volume food service work including simple preparation, serving, cleaning, sanitation and safety practices; basic units of measure; principles and techniques of public relations.
ABILITY
Understand and follow oral and written instructions: learn to assist in the volume preparation of full meals; lead others in the more routine aspects of volume food preparation, service and cleaning work; perform routine food preparation, service and cleaning work; count and perform routine arithmetic calculations including simple addition, subtraction and multiplication; make simple notations; read various scales of measure and portion items accurately; communicate effectively; establish and maintain effective working relationships with others; treat customers courteously.
PHYSICAL/MENTAL REQUIREMENTS
Mobility – Occasional use of a data entry device; frequent sitting, standing or walking for long periods; frequent pushing/pulling, bending, squatting and crawling; Lifting – frequently 5-30 pounds; occasionally 70 pounds or less. Vision – constant use of good overall vision; frequent reading/close-up work; occasional color, depth and peripheral vision. Dexterity – frequent repetitive motion; occasional writing; frequent grasping, holding, reaching. Hearing/Talking – frequent talking/hearing in person and on the telephone. Emotional/Psychological – frequent decision making and concentration; occasional public contact. Special Requirements: occasional overtime and traveling. Environmental – frequent exposure to noise, and cold.
